Eww... just the idea of vegan/gluten free cake makes me cringe. "Buttercreme" frosting made with palm oil shortening and one normally uses a high gluten flour for baking cakes, as it produces a more tender crumb. That has to be some nasty, dense cake with greasy tasting frosting.
